The Japanese Sansho Pepper has a subtle, earthly and rich flavour giving off the aroma of citrus. Sansho pepper is generally used in Japan as a topping for unagi eel, or for noodle broths and bamboo, but try using it to give an exotic tang to Western dishes as well – it really compliments grilled chicken, fish and beef, as well as stir fried peppers and tomatoes, and even works well in simple vinaigrettes.
