SKATE WINGS

Skate wings are the pectoral fins of a skate, which is a cartilaginous fish. Theyt are sweet flavoured with firm flesh, a taste similar to scallops, while their unique texture when cooked, it becomes off-white. Skate wings are best served roasted, or fried with some fresh brown butter and herbs.
