Description
It is endemic, i.e. it is born, grows and dies in its waters, unlike the fish of the Amvrakikos that feed there but return to the Ionian Sea to reproduce. Its characteristics are special and unique, with its whiskers being quite long, its snout protruding somewhat in front of the eyes, while its tail has a bright blue, red and yellow colouration. Its size usually exceeds 10 cm. Its back is also distinctive, with brightly coloured stripes, especially when the bottom where it lives is rocky, or covered with posidonia. The sweetness of its flesh and its crunchiness are the main reasons why experienced chefs worldwide are fanatical about it.
