GOOLWA PIPIS COCKLES

Harvested from the pristine waters of the Southern Ocean, kept clear and sparkling by the rolling waves. In splendid isolation, the Pipi reaches maturity surrounded by sea and bird life, sand hills and sky. Only accessible by boat and traditionally harvested by foot and rake, it remains a truly sustainable and pure food source. Pipis can be tinted various colours as they age. Green tinges, brown hues, chalk whites, crisp creams, golden yellows, and roseish pinks. Balanced salinity with subtle sweetness. The natural brininess is complemented by a mild sweetness with nutty undertones, making it an excellent base for seafood dishes. They are great in a risotto, or pasta.
