Umeboshi (Plum pickles) are pickled Ume fruits, that’s a cross between an apricot and a plum with no additives and only pickled with salt. These are very salty and very sour, a real Japanese classic. They are made with ripe Ume and therefore have a very fruity aftertaste. They are mostly eaten by itself as a snack, with a bowl of rice, or are used to make onigiri rice-balls. Recommended for rice dishes as well as pasta dishes, etc.
