SHRIMP SPOTTAIL MANTIS (HOSO)

The Spottail Mantis Shrimp (Squilla Mantis) is found in high densities in areas with suitable burrowing substrates in the Mediterranean Sea. This specie is more closely related to crustaceans, cephalopods and benthic fish’s. They are highly prized for their exceptionally sweet, delicate meat, often described as a superior blend of lobster and prawn. The tender, white flesh has a firm, slightly bouncy texture that is best when steamed, grilled, or fried with salt and pepper to highlight its mild, oceanic flavor.
