Yellowtail is regarded as the premier white fish for raw dishes by every fish loving culture in the world. Easily identifiable due to its trademark bright red bloodline, Yellowtail delivers a clean flavour and an unforgettable melt in the mouth texture. Although found in waters worldwide, the Ike-Jime standard Spencer Gulf Kingfish from the cold oceanic waters in South Australia has long been the most highly prized with European chefs. More recently, the very best handled Hamachi from Japan has been adopted by some European chefs, looking for the extreme butteriness this species offers.
