While sometimes called crayfish, it is more closely related to the lobster and is distinct from prawns. Scampi is the tail meat of the langoustine and while this term can refer to any peeled prawn tail in some countries like Italy, UK and other places, it specifically refers to this langoustine tail meat. It has a sweet, mild taste and a firm, white flesh. It is prized for its flavor and is prepared in various ways, such as boiling, roasting, or frying, often served with lemon and butter sauce. It is also ideal mixed with other shellfish, such as shrimps and king crab in steamed dishes, or soups.
